One-Pan Chicken & Veggie Fajitas

Ready in: 25 minutes Why you’ll love it: One pan meal. Which means no mess.

Ingredients:

2 chicken breasts, sliced

1 red pepper, 1 yellow pepper, 1 onion — all sliced

2 tbsp olive oil

1 tbsp taco seasoning

Tortillas + toppings (cheese, salsa, sour cream)

Instructions:

Toss chicken and veggies with oil and seasoning on a sheet pan.

Bake at 400°F for 20 minutes.

Serve in tortillas with toppings.

Kid job: Let them sprinkle cheese or mix the veggies before baking. They’ll be happy to make their own fajita too!

Cheesy Spinach Pasta (That Kids Actually Eat!)

2 cups pasta

1 lb ground beef or turkey

1 packet taco seasoning

These are a family favorite in our house! We often make them when the kids have friends over — it’s an easy, fun pizza night without the hassle of making dough from scratch. Everyone gets to design their own mini pizza, and cleanup is a breeze.

Ingredients:

Whole wheat pitas

Tomato sauce

Cheese (mozzarella or cheddar)

Toppings: pepperoni, veggies, pineapple — whatever’s in the fridge

Instructions:

Spread sauce on pitas.

Add cheese and toppings.

Bake at 400°F for 8–10 minutes until golden.

Kid job: Let them design their own pizzas and don’t worry too much about the mess for tonight.

Lazy Stir-Fry Rice Bowls

2 cups cooked rice

Add cooked chicken or shrimp if desired.

Keep a “Dinner Helper Chart” on the fridge — kids can take turns choosing or helping with the meal of the night. It builds confidence, teaches skills, and makes them more likely to eat dinner (because they helped make it). The big smile they have when I tell everyone at the table that they helped make what’s on their plates is priceless!
